Esaul Ramos began his journey as a backyard griller, eventually finding himself rotating briskets in Austin, Texas. After a few years in Austin, he called me up to partner with him, and we finally put our high school dreams of barbecuing for a living into action in our hometown of San Antonio, Texas. Without investors or suit-and-tie types from the bank willing to give us a shot at a lease, we decided to push forward and put our pennies together.After months, we finally caught a break at our location on 2731 S. WW White. We took on the restaurant's remodel ourselves while hosting a series of pop-ups to generate some cash flow. Everything you see at 2M, from the fence post tables to the Smokehouse itself, was done by hand by both of us, with the help of our family and friends. With funds running low and our pop-ups coming to an end, it seemed like we would never open.After what seemed like an eternity of months, late nights, hard work, and lots of faith, 2M Smokehouse officially opened on December 3, 2016.

In 2017, Big T got his first smoker as a birthday gift from his parents after moving to Texas from the Chicago region and falling in love with real Texas Barbecue. He would stay up overnight to barbecue and stumble into work with samples for friends and colleagues. After a few months gone, and a bigger waistline - they convinced him he has what is takes to compete with the 'big dogs' in Texas Barbecue. Fast forward to early 2018, when Big T rescued a Boxer-Terrier mix, Brix, that had such influence on his life, he rebranded and named his barbecue business after him. Big T is a transplant that has fused his love for food with Central Texas Style Barbecue. Most of the recipes are simple and let the meat shine. There's nothing to hide, and he'll share all of his secrets, because the one thing no one can match is his passion for smoking meats to perfection. His love of food comes from his mother, Mama Sales, where her first two ingredients are always butter and love. Daniel Castillo spent 7 years as a corporate chef for Whole Foods Market before discovering his all-consuming love for craft barbecue, which led to an apprenticeship at the acclaimed Brett’s Backyard BBQ in Texas – which then led to quitting his day job to pursue BBQ 24/7. With his wife Brenda’s support, the two began launching BBQ pop-ups in their family backyards and then pop-ups with local breweries in and around Orange County before opening their first brick & mortar location, Heritage Barbecue, in August of 2020 in the historic town of San Juan Capistrano, Calif. Dustin Martin, Owner/Pitmaster of Hill City Chop House has had a love for smoking meats and feeding his family and friends for years. His passion for throwing logs in a fire box and trimming briskets started out as just a hobby while working in the Bakken oil shell of North Dakota. Former Franklin Barbecue Pitmaster Ben Lambert and his wife Sarah Lambert decided to open JNL Barbecue in November of 2019 in a small food trailer with a 1,000 gallon Mill Scale cooker on Shady lane on the east side of Austin and then moved to Riverside in early 2020. In late 2022 they relocated to a shared brick and mortar spot on East Cesar Chavez and are currently waiting for their permanent brick and mortar location to wrap up construction. Kris Manning, 33, was born and raised in Dallas, TX. Just like a true Texan, he was raised on good BBQ. One of his very first jobs was rolling potatoes in the very business he now owns, Smokey Joe’s BBQ. In 2014, his father gave him the opportunity to take over the family business. What he thought was just going to be a stepping stone turned into a life long legacy. Throughout the years, Kris was able to get knowledge not only from his father and his father’s former partner, Joe, but from some prodigious mentors as well such as Daniel Vaughn, Cade Mercer, Reid guess and others. With all of this support, his dedication and most importantly his hard work, he transformed Smokey Joe’s BBQ in every way. The walk up window was replaced with a sit down restaurant, the brick pits were replaced with 1000 gallon smokers, the brisket technique was tweaked so now the brisket just melts in your mouth, and the outreach expanded so not only is it a neighborhood staple but a thriving catering business as well. With all of these adjustments, Kris garnered a lot of attention. His biggest accomplishment is being named a Texas Monthly Top 50 BBQ recipient in 2021. Since then, Kris has competed on a tv show - Fire Master’s Canada Season 3 on the Food Network, named Top 50 Best restaurants by D Magazine in 2023 and a slew of news appearances, interviews, collaborations and events. Outside of work, Kris enjoys spending time with his wife and three kids. A fun fact most people may not know is that he is a long distance runner and has completed a few half marathons as well as one full marathon! Kerry Bexley, owner of Snow’s BBQ, knew there was a demand for good BBQ in the small town of Lexington with a population of only 1100 people. Lexington has always been known for its Saturday BBQ. It’s just a tradition! Kerry and Ms. Tootsie Tomanetz, pit boss, discussed the possibilities in the late 90’s of opening a BBQ joint, but took no action until several years later. In November of 2002, Kerry stopped to visit with Ms. Tootsie, kicked the ashes around, and discussed again the opening of this joint. She told Kerry that if he was serious, they better sit down and have a real “heart to heart”. They did just that, and Kerry immediately started building the BBQ pits.

Once there was a guy that spent most of his out-of-class time at Ole Miss scouting out, jumping in, and rummaging through dumpsters and street side garbage piles. The highlight of his week was the “night before trash day.” After graduation, he wanted to move back to the Coast. One sobering morning he surveyed all he had collected over the years. It was everywhere, it was insane: warped used two by fours, old tin roofing, bent nails, ugly windows, mountains of pure, unadulterated junk! Not knowing what to do with it and not willing to part with a single plastic bucket or warped record, he built a trailer out of the larger parts and loaded the rest on top of this homemade junk hauler and moved back to Ocean Springs. One evening while dumpster diving on the Coast, the guy, Brad Orrison, knee deep in hardwood flooring had an epiphany: “I’m gonna’ build myself a take out barbeque joint with all this junk!” Brad (24) and his sister Brooke (19) hammered and nailed. They practiced cooking, smoking, and timing meat to perfection. A few weeks after opening, Brother Brett (22) just graduating from Full Sail University in Recording Arts and being the sound engineer for the House of Blues in New Orleans, breezed in with all his knowledge and contacts to set up one of the finest Blues venues in the South. Now, The Shed had all the elements it needed to become a true BBQ & Blues Joint. The Shed is truly a family affair: With Brad at the helm with the ideas, Brooke making sure that those ideas make money, Brett on the sound, Mom telling everybody about it through marketing, their G-Maw manning her beer bar (she doesn’t even drink beer) and Daddy O making sure they don’t do anything stupid. Oh, and when Daddy O tried his best to retire, the kids came up with something for him to do…..make BBQ sauce for all The Sheds!! So now Daddy O is the “Saucerer”at The Shed Saucery! They are pumping out ShedSpred, mac sauce, bean sauce, slaw sauce and bottling The Shed’s specialty sauces for retail sales. The Saucery is also offering to produce sauce for folks who want their sauce made out of the exact ingredients they want and in small quantities. They will provide production, bottling, labeling and packaging. Back to the story: After endless attempts Brad perfected his SECRET SHED RUB. Then he began the search for the perfect sauce. As sent from Heaven, a man called Poppa came on the scene. Poppa had spent the past twenty years making his sauce for his friends, his friend’s friends, and now THE SHED was blessed to have him on board. The day Brad’s baby backs got rubbed with the rub then slapped with the sauce “The Shed” was born and the Thunder Rolled! The rest is history. BUT WAIT !!!! There’s even more to the story: It’s the customers, affectionately known as “ShedHeds.” After eating at The Shed, folks started volunteering to help. They would bring in more junk to spruce up the place, built additions on the building so they would have a place to sit and offered to do anything they could do to help Brad and Brooke put out more BBQ to keep up with the crowds. So over the years the little 300 square foot take out has morphed into 9,570 sq. feet including the office and stage. It seats 120 inside and an additional 450 outside. The Shed’s not a fancy restaurant, as a matter of fact, it’s not a restaurant at all….it’s a full fledged JOINT….The Shed is an Experience, a Destination to enjoy! ShedHeds bring their families, sit around the bonfires, hug their kids, and eat the best darn BBQ on the bayou. (Of course… it’s the only BBQ on the Bayou). On Friday and Saturday nights the sounds of live Blues radiate from the stage bringing with it the essence of old school, down-home southern, tacky charm.

My name is Tyler Frazer and I am originally from Amarillo Texas. For the past 4 years, I have been working for a promotional company doing large catered events. When I took the job I was fulfilling a set goal to work large events and gain the skills that I would need to open a barbeque restaurant. The job was working for Mrs. Bairds Ultimate Smoker and Grill. “The Grill” is the world’s largest transportable smoker. The first summer I worked for the “The Grill,” we did stops from Kansas City to Seattle to San Francisco. We catered many venues ranging from lunch for Albertson’s Corporate Headquarters (about 350 people) to the LA Children’s Hospital. Where we stopped traffic on Sunset Blvd. and fed everyone at the hospital (about 3500 people). Then we tailgated the Big Twelve tour and cooked anywhere from 4500 hotdogs a week up to a whopping 9200 hotdogs at the Texas/OU game. We catered approximately 100 events per year. In addition, for many years I was the consumables buyer for a national retailer that had 160 stores from Washington to Tennessee. During my 8 years at that company I excelled in the consumable category. My experience as a buyer combined with my experience working in the food industry has given me a great unique skill set. This is not an accidental path that I have been traveling. I intentionally put the plan in motion to start a Barbeque over five years ago. And I took advantage of having the world’s largest smoker and grill to learn as much as I could about cooking for large groups and honing my skills on producing tasty food. I took advantage of my travels to sample all the local barbeque places along the way.I am a goal setter and have clear direction and focus on the direction I want to go.

His Dad, Arnold Sánchez started winning Bar-B-Q and Chili cook offs back in 1979. In 1989, Arnold’s Texas Bar-B-Q was opened in East Dallas at 601 N.
